Well, I have already ridden in a hot air balloon, and it is amazing! You never forget it.
For the rest of those, I would love to see the Titanic, or ride in a submarine. (you didn’t put it, but I would also love to scuba dive)

1) Ride in a space shuttle. It would be good to go to outer space, and it is one option you have that I think I would never be able to do.
2) See the titanic. Again an experience that not many people would ever be able to do, and also I would find it interesting.
3) Ride in a hot air balloon. I think that would be a wonderful feeling.

Hello there my friend, I would easily, ride in the sub, I love the ocean, I would TRY to climb Mt. Everest I may not make it, but, I would give it a shot, for sure I would ride in a hot air balloon that sounds like a heck of a lot of fun! Well I already told you I would go in a submarine so yep for sure I would want to go see the Titanic! That would be really cool!

Interesting set of choices. Whitewater rafting, bungee jumping, sky diving, and the hot air balloon ride are all things that can be done without that much effort other than setting them up and driving to the place. So, I would choose from the ones that would be harder to set up.
Of the remaining choices, Mt. Everest and the channel swim are a lot of effort. I would love to be in good enough shape to do either of these.
I’m going to choose the Space Shuttle followed by the Submarine ride as my favorites.
